The measurement is made by measuring the light refracted through the honey solution. The reading is done with a triple scale that determines the sugar, water and Baumé content. The Baumé is a measure used to determine the concentration of solutions. The sugar content of honey should be more than 70%, the water content should be below 20%, and the Baumé should be between 11 and 15.
